Tazhin - is a traditional clay dish of Moroccan cuisine. The lower part of tazhin — is something between a frying pan and deep bowl with a thick bottom and sides. Tazhin has a conical cap with a small hole. This cover allows moisture to circulate inside the dish, the excess of vapor is removed through the hole and liquid does not boil over the edge.
Stewed meat with vegetables or fruit in tazhin get very juicy, tender, and low caloried as there is no need no additional fat for cooking .
